...................Blackened Fish


 Here are some pictures showing the steps.  This is such a lovely, savory dish, perfect springtime or summertime dish!

Blackened seasoning: In a sauce pan, melt 2 oz of butter, add 1 tbsp of thyme, 2 tsp black pepper, 1 tsp cayenne pepper, 1/2 salt, juice of half a lemon stir together.

On an outdoor burner, heat cast iron skillet until smoking.  Meanwhile, dredge fish in butter mixture.  

One completely coated put fish in hot skillet.
